Coming from a single parent household and the edlest of 5 siblings, I had to learn to cook from an early age, at around 9 my mother, Jamila, began teaching me to cook traditional Trinidadian Meals, as well as, many American and European favorites like Lasagna. I immediately took to cooking with a passion, often chasing my sister from the kitchen so I could do all the cooking himself. I'm very passionate about my Indo-Caribbean Heritage and especially the Cuisine, speaking at every opportunity about both, at conferences, non-profits, special panels and pretty much to anyone who would listen. I often gives tours that include food, in the Indo-Caribbean neighborhood of "Little Guyana" in the South Queens communities of Richmond Hill, South Ozone Park, Ozone Park and South Richmond Hill (11419). 

 

Along the way I have also connected with professinal Chefs and restauranteurs who share my Passion for #IndoCaribbean and #Trinidadian #Cuisine, (where #doubles was invented almost 100 years ago), many of those folks callaborated in creating our recipes. I estimates I has eaten more than 12,000 doubles from at least 50 different vendors and cooks thoughout my life. The creation of these recipes was truly a team effort as everyone was involved in experimenting to find the best taste and quality product to offer you.  Special thanks to Rodney , Mahaise Roopchand, Richard Gordon, Rick Aziz and especially, my mother Jamila Sukhdeo.
